I can't eat anything that still has legs on and little beady eyes staring at me.
Also, I've joined the "Save the Quorns From Unhappy Lives" (SAQFUL) action group. You know there used to be herds of them, covering the plains, as far as the eye can see! Now, there are just a few wandering here and there. You're lucky to see a quorn now. Hunted for their flesh, which hangs in convenient cube-like forms. Never hear the haunting call of the quorn now, "hhhhhooooaaaqwk!" in the misty wooded evenings. Calling for their mates. None will answer now. You should be ashamed of yourselves. :x

Chocolate eclairs
Alright, I know this is cheating, as I haven't actually made these.
I did promise an eclair recipe.*

Hi zane, I see by your recipes that you are a soya sauce fan. What a good idea! I sometimes add Worcestershire sauce to things like shepherd's pie, especially if it is........(looks round to make sure Sy isn't listening).........quorn :oops: Also I like the idea of using courgette instead of aubergine for moussaka as aubergines can be a bit slimy.

I know i don't like aubergines raw but once cooked they even worse. We eat a lot of quorn in our house and i find soy sauce adds to the flavour. Plus i go to slimming world(have for 8 weeks now) and it's a superfree food :lol: So it get a lot of use from me.
Sy's proberly out flying the banner for quorn as we speak :lol: well sorry to say the kids and i have just murdered a whole pack of quorn mince for lunch(my first meal in days well done me :D ) and it was DELICIOUS!!! Sorry Sy :lol:
Glad you managed a meal, Gemma, that's a good sign. However, I fear you may be in for a Major Telling Off at your cruelty to quorn when Sy gets back :D

I'm nursing an orphan baby quorn at the moment. His parents taken by quorn hunters from Tescos. I've named him Kevin. Trouble is, he's pooping everywhere and has eaten all my Frosties. Nappies keep falling off him.

I was invited for a meal with my neighbours on Saturday, it was gorgeous. She had done a Mexican theme and for the starter it was basically a packet of nachos with some guacamole spooned on top and then some grated cheese and in the oven for five minutes, it honestly looked as if it had been made in a restaurant.
Made some more of my famous veg soup today and threw in some lentils. All my five-a-day-in one go!

I am taking "Ivan" the young Quorn to the vet. He's put on so much weight and is really grumpy. Kevin is shunned and stays away from "Ivan".
They stopped fighting now and messing about in cupboard. Kevin sits on his own on window sill.
Bit worried, got quite fond of them.

And she's expecting baby Quorns.

I have bought a massive bag of porridge oats in a drive to be healthy as well as economical, the supermarket own- brand ones are so cheap! I heated it in the microwave; you have to get a bigger bowl than your cereal bowl as it "rises up" during the cooking, then you can decant it into your normal dish. I used half water and half milk.
Ooh I have found this thread again.
I got a cookery book for Christmas and one of recipes was nettle soup. I can't wait to try it later in the year!

At this presant moment am on a sea food diet...you sea food and you eat it or you sea food and you want it. ARGH!!!!! Ave a wedding to go to on 1st may!!!!!
Maybe we should make this a diet thread as well? Mind you, if I have to carry around imaginary scales as well as imaginary glasses, my handbag is going to be overflowing! :lol:

Just had a quick look and it's really good. I'm not very domesticated in the kitchen at all, but some of these recipes looks scrummy, and even easy for me.
When I try something new, my lad will say 'oh, we know what that will taste like then'. He knows me soooooooo well, haha

I was very lucky yesterday as I was staying with friends who cooked a roast dinner at lunch time, then I went on from there to my mum and dads who had cooked a roast dinner for the evening meal too so me and the kids had two roast dinners in one day!!!

Got a fantastic and very easy recipe for Rock Buns. This makes about 30 so you might want to halve the quantities if you have a smaller family.
1 pound SR flour
6 oz butter or marg
2oz brown sugar
1 pound mixed dried fruit (value type in supermarket)
2 eggs
Milk
Any spices like ginger, nutmeg or cinammon
Rub fat into flour. Add sugar, spices and fruit and mix thoroughly. Make a well in the middle of the bowl and pour in beaten eggs and a big glug of milk. Keep mixing till all dry ingredients absorbed and the mix is slightly sticky, adding a bit more milk if it's still dry. Using a spoon and your hands make ping pong ball sized cakes and put on greased baking trays. 15 mins at 180 degrees, oven a bit hotter if not fan oven.
YUM!
In my house I roll out a chicken breast between two pieces of clingfilm...then when you slice it it goes a lot further and my little carnivores are satisfied.
Using the same principal I grate carrot and courgette into mince (most of the time they don't notice).

I went to my neighbour's house the other week, she had made pate by mashing together a tin of sardines in tomato sauce and some soft cheese, it tastes like tuna and is healthier as sardines are oily fish
I don't know if I have mentioned this already, but my daughters favourite summer holiday lunch is:
White bread toasted one side under grill
Tomato puree spread on the other
Cheese on top, then under the grill again.
Homemade pizzas! Easy, quick and cheap, as long as you go sparingly with the cheese!

Mincemeat(or meat substitute) sweetcorn, mushrooms,peppers,its rather yummy and its good nutritional food, especially for wintertime, my Mum is always a stickler for doing lots of stews in winter time, she will do a huge pan (or two) and we would just dip in to it over the course of a couple of days(I am still guilty of going round there even now to have her delicious cooking, me and the children,mums cooking is always best!) On the subject of eating healthily on a low income, I have a wonderful cook book, it's a student cookbook its rather appropriately titled "Eating healthily without Microwave, Mixer or Money" I will put some recipes up on here very soon,there are plenty of Vegetarian dishes too!!

Has anyone got tips for cooking rice and peas?
Son has a friend of African Carribean background and he only visits in the evening but said to me last night that he always likes the look of the food he sees the adults eating, and asked about buffalo chicken and rice and peas. Now I don't like chicken wings but I am quite happy to get some jerk sauce and marinate some boned chicken pieces in it then bake it, but when I looked online at rice and peas, all the recipes call for a vast amount of coconut milk, it is not just the money but it is high in fat isn't it? Could I just put a small amount in for flavour and use water for the rest of the liquid?

My sister always goes on about the calories in coconut milk every time she does some Taiwanese chicken of some sort..
Ooh thank you, i did google it but didn't get that result. Pineapple and a bit of dessicated coconut sounds much more healthy. I looked up coconut milk as well, the calories and fat are still not as bad as whole cow's milk but it is saturated fat which is the real baddie.
Incidentally I was shocked at how much fat there is in semi skimmed milk. I only drink milk in three cups of tea per day but at the moment am buying a purple top milk that is 1% fat and only costs £1 for two litres. Son has mammoth cereal every day.
Anyone got any winter warming recipes? I can recommend homemade soup with chilli powder in it, although not everyone's children would like this

You can not beat Bangers and Mash with onion gravy on a cold day. A nice beef goulash with peppers is a winner as well.

Slow cooked beetroot soup
4 Large raw beetroot, peeled (with rubber gloves on!!!) and diced
1 Large potato, peeled and diced
1 Large onion, peeled and diced
1 pint vegtable stock (hot)
Dice all your veggies and place in slow cooker with the veg stock
Cook for 4hrs on HIGH
Blitz and enjoy with some freshly made pipping hot bread! :)
This soup makes 4 good portions or 3 GENEROUS portions (which is how we enjoyed it!) lovely and red if you like your soups thick then put in another potato!!!!
