and here's one to cool you down!!!

Egg Mayo! (very simple and easy to make! only hard bit is pealing the shells off the eggs!!!)

6-8 eggs 

1/2 tea spoon of mustard

6-8 table spoons Mayo! (yes i don't make my own! straight out the pot for me!!!)

pinch of pepper

here's how to do it! lol

boil up the eggs till they are hard boiled (i have to say i don't actually know how long that is as i use an in the pan egg timer!!!)

in a bowl (or pot with a lid saves on washin up that way!) put the mayo and mustard in and mix together, have a little taste if it's a bit too mustardy add a little more mayo!

when the eggs are boiled empty out the boiling water (carefully!) and stick under the cold tap and let the water run over the hot eggs till they'v cooled down! Deshell the eggs and brake/crumble up in your hands in to the bowl with the mayo/mustard mixture, when you'v deshelled all the eggs, mix in to the mayo/mustard mix with a falk crushing any big lumps off egg as you go

make sure all big lumps are now small, give it a good turn with your falk makin sure you'v got all the mayo/mustard mixed in to the egg, have a little taste and add the pepper to taste! 

add this to sandwhiches, salads, toast, straight out the pot with a spoon and straight in the mouth!!! change the taste and put in grated cheese this will keep for about 3-4 days in the fridge but as we'v found out we'v eaten this with-in 24hrs of making it!!!!!!!!!!!

Mmm interesting! I always make mine with chopped spring onions, salad cream, mayo and a tad of balsamic! Oh I am beginnning to feel hungry and its only 10am!!

hehe! all those sound really nice with the egg mayo and another addition that's just popped to my head is chives! mmmmmmmmmmmm! ... well the egg mayo's all ran out here :( but getting some more eggs tomorrow so might just might make some more! :D

well for tea tonight I made stuffed jacket potatoes! again another REALLY easy recipie!!!

1 potatoe to how ever many people your feeding!

cheese/bacon/ham/onion (what ever fillings you like that will work with potatoes!)

(i made cheese and onion for my self and my mum, plain cheese one for my son and cheese, onion and bacon for my step dad!)

score the potatoes around the middle lenght ways, if your goin to pre cook them in the microwave then prick them first! (i would surjest popping them in the micro so they cook all the way thru first!) pop them in the oven till there skins just start to turn crispy.

while the potatoes are cooking grate the cheese, cook the bacon, chop the onion prepair what ever filling your having ready to go in to the potatoes, if you have bacon or ham cut it in to squares.

cut the potatoes along the score lines you made and leave too cool! cut around the edge of the potatoe leaving enogth potatoe to keep the sides ridged. (i did one potatoe at a time made it easier to divide the mash back in!) scoop out the middle of the potatoe in to a bowl and mix in your choice of filling, mash the potatoe with the back of a fork untill it looks like mash potatoe, divied the mixture in 1/2 and put back in to the potato skin. Do this with all your potaotes then pop back in the oven to warm back thru.

Enjoy with a nice healthy salad or as a snack in the middle of the day! a nice tasty treate if i do say so my self! :)

Hatz you always come across as having a lot of patience with food, that is the one thing I don't have, if a recipe takes time I find it hard to concentrate. Anyway your stuff sounds lovely Smile

Ok so some of you know there is a Come Dine with Me in my street. I practised the pud yesterday, it is called Pear Galette with toffee sauce. It tastes so complicated and clever and yet it is quick and easy to make. See here for the link, with a picture. DROOL!

i am a bit of a cook at heart! lol my prob is if i don't have something on the list i cant make it!? lol so if it says it needs 4 eggs and i'v only got 2 i don't know what to subsitute it with!!!! so i just don't make it! lol (makes sence to me!)

i'm not a pear fan but the pud dose look yummy! :)

No I am not a pear fan either, always think they are a bit stringy and never the right softness, but it went soft and mushy when it was baked., One of the people on the website said she does it with apple

feeling a bit of a cooking Queen this weekend! :) i'v made cherry short bread biscuits yesterday and some lovely tomarto soup today AND an apple crumble :) (hopefully yum yum!!!) lol

Cherry short bread biscuits

Put the flour and butter together in the mixing bowl, then rub with your fingers

Add half a teaspoon of vanilla extract to the bowl and then mix in the
caster sugar. Tear the glace cherries into small pieces and add these to
the mixing bowl too.

Now squeeze the mixture into a ball with your hands until it all sticks
together and sprinkle a clean surface with flour. Then roll the dough
out flat with a rolling pin until it is about 0.5 cm thick.

Now use a cutter to cut shapes out of your mixture and place them onto a
baking tray that has been pre-covered with baking paper. You can
re-roll the dough to cut more shortbread biscuits until it is all used
up.

Place the tray in a pre-heated oven at 160ºC Fan/180ºC/Gas 3 for 12–15 minutes.

 

Tomato soup

pot of passata  (cant spell it!! unless that's how you spell it! tomatos blended to a fine liquid lol)

tin of chopped tomatos

4 decent sizes potatos

(and cuz we had some and thought it would be good!)

2 sticks of celary!

1 caugette!

and a pack of tomato and basil cup a soup!

(i cooked this in the slow cooker as we went swimming!)

put all the wet liquids in to the pot

chop up the celary and caugette in to ince thick peices

peel and chop the potatoes in to 1/4's

cook in the slow cooker for a couple of hrs

when all the veg is soft blitz up to a smooth texture

serve with some lovely crusty baguette bread :)

 

Apple crumble

peel, chop and core 4 big sized apples

cook in a little water with sugar till the apples are soft

for the crumble

170g plain flour

75g butter

75g sugar

rub together to form crumble

......

put the apples in the bottom of an oven proof dish

sprinkle on some allspice and cinamon

spoon on the crumble mix add a little extra allspice and cinamon to the top of the crumble

pop in the over for 20-30 mins at 180 electirc (and it smells as ours is done!!!!)

the biscuits sure did fly here too! and there was only 2 of us over the weekend! lol but yes a whole weekend of cooking! :) a lot easier cuz parents wernt around so could just get on and do things as and when i wanted and not have to fit in to what me mum wants to do too! lol

Rock Buns:

8oz self raising flour

3oz block marg or butter

1oz sugar (recipe says brown but I don't think it matters)

8oz dried fruit (whatever you have got or is cheapest)

Spices (I use mixed spice but you can choose cinammon or nutmeg or both)

1 egg and some milk

 

Rub butter into flour, you can be quite gung-ho as it only needs doing roughly. Stir in sugar, fruit and a big shake of spices. Make a well in the centre of bowl, add beaten egg and a slosh of milk and mix. Add bit more milk if needed but you don't want it too sticky. Roll into about a dozen balls and bake on greased tray, 20 min at 170 (recipe says 180 but I find the fruit on the outside burns if you have it that hot)

It depends on your budget in terms of time and money.....and how many children!

Here are some recipes for children's things.

For myself, I always used to do hot dogs for the kids, it is cheap and simple. The children would probably like the same ouds as the adults, strawberries? and maybe some special buns from the recipes above.

This evening my children ate Marzipan sandwiches. It involved some nice fresh crusty French stick with slabs of marzipan left over from Christmas. My daughter asked for tomato sauce in hers, but I had to say no to that.

It was supposed to be Pâté, that's what I had, but they turned their noses up at that and pointed at the marzipan in the cupboard.

My marzipan choice was more conservative... I just carefully wrapped marzipan around broken walnut pieces.

And! I'm not realy a fan of Tomato sauce hazeleys, maybe on burgers and sometimes I put it in my 'bocadillo de tortilla de patatas'

I like making Tortilla, it's cheep, easy, filling and tasty : )

No, not stressed about the cooking, what is a bit worrying for me is the others have gone on until about 3am, if you remember. I have put 7pm until midnight on my invite and have spoekn to each of them and said I have set a deadline as I can't do late nights. That's the only worry I have. As I am last to cook, I thought I could do a rounding up at 11.30ish of the event and do the scores etc, which would be a good "signal" that it was almost the end, heh heh

Potato salad, really inexpensive, use the cheapest mayo as you cant taste it once mixed with everything.

Cream cheese and red onion sandwich filler, again buy the cheapest cream cheese and mix it with one red onion finely chopped, its yummy.

Chicken and stuffing, buy the cheapest chicken roll and some stuffing, once on a sandwich together you cannot tell the difference between cheap or expensive chicken.

Egg mayo, also some of the cheap savory eggs, cut them in half and pop a little extra egg mayo in makes them look more attarctive and they go further.

Sausage rolls, always but the frozen party ones £1 for 50

Cheapest dips with whatever tortilla chip type things are on offer for us it was dorittos at £1 per large bag.

Tuna mayo sweetcorn again all the cheaper brands.

Rice with either kidney beans or you can go for the mixed veg, tastes good and is filling.

Pasta, again you can choose different things to go with it or can put it out plain for everyone to add their own bits to it, tuna mayo, ham etc.

Top tip when preparing the sandwich fillings, I purchased a large sandwich box and inside were 17 other containers of various sizes from Asda for £3. Prepare everything and then pop it into a container pop the lid on an fridge it, make small batches of sandwiches at a time that way they are always fresh and there is little or no waste as the rest is still in the fridge and can be used the following day on jacket potatoes or with a salad etc.

Top tip for cakes/biscuits etc, if you can, leave to the last minute, always check out the reduced items 1st, I needed 2 birthday cakes and managed to get a large choc try one and a triple choc round one for £6.50 for the 2, also got some choc nibbles for 40p per bag which made a big difference.

I also reccomend the frozen deserts cheescake 2 for £3 and they were very nice.

I added some chepaer brand crisps and snacks to bulk it up along with some garlic bread again the cheaper one that it tastes just as good as the more expensive ones, carrot sticks again inexpensive.

Think I have just about covered it, it was a good buffet, looked good and did get eaten!!!!!!! xxx

Hope it might help someone else if they have the need to buffet on a budget, it really didnt cost much xxxLaughing

Right, here's the risotto recipe I was on about yesterday (feeds 4, and even my no2 son who really only likes beige food eats this):

chop an onion and soften it in 2 tbsp of olive oil, then stir in 250 g of risotto rice, making sure it gets coated with the oil. Pour in a glass of white wine (this is of course optional) and stir till it's sort of soaked up. Gradually work in 750 ml of vegetable stock. With the last lot of stock throw in 250 g of asparagus (or peppers or courgettes or whatever you like) and 50 g of parmesan. I use lots of black pepper with it, too.

Something I made last weekend, this is enough for two greedy people (me and son)

Dice two giant potatoes (or more small ones) and boil in water for five minutes. Drain.

Cook 6 rashers chopped bacon (you can grill or dry fry)

Get a casserole dish and put in it a chopped onion, some chopped mushrooms and four tomatoes chopped (you could use tinned but squashy fresh ones are better). Then add the bacon, mix around and top with the potatoes and some grated cheese, about half an hour in the oven and hey presto.

You can vary this and include different things you might have around, such as sweetcorn, peppers, cooked ham or chicken, a tin of tuna, whatever is available Smile

Oh this thread is great!

I have a recipe for meatloaf...you can use turkey mince or a mixture of turkey mince and veggie mince or just veggie mince.

If you do have a food mixer that helps, and you can do the dried ingredients first.

1) In a large bowl put in bread crumbs 4-5 handfuls, one finely chopped onion, the mince meat and 1-2 eggs. Mix together well with a wooden spoon. Add garlic salt and black pepper to taste.

2) Grease an oven proof dish, then add the mix.

3) Pop in the oven for about 45 mins or until a fork comes out clean( don't put the mix in too thickly, so thinner and even is better).

Goes really well with mash and veg, and can be then put in fridge and eaten cold too if you like.
